Whats for dinner?



The weigh in went terrific.
My Doc was as pleased as I was!

Here are some photos of what I have been doing in the kitchen!

It was so good and I was so happy I made 6 of them.


Its Cilantro/Lime chicken burgers... FANTASTIC! I made up this recipe. SO EASY TOO!
2 boneless skinless chicken breasts cut into large chunks
a small handful of cilantro (to taste)
1/4 of an onion
a couple long dashes (to taste) of Cholula hot sauce
or a hot sauce of your choice
2 tab. bread crumbs
Salt and pepper

Put chunks of chicken in food processor and grind up for about 12 pulses. Add remaining ing. and pulse till smooth, but not mush.
Make into patties...

Cook on indoor grill or non stick skillet with a small amount of olive oil
for maybe 4 minutes a side.
Watch them tho...
don't cook them too long or they will dry out.
Just long enough for them to turn whitish.

Freeze what you don't use for another time. Put them on a bun if you want a burger,
if you are low carb-in like me... no bun necessary!




They came out tender and moist, delicious and healthy!
Try em! YUM I have some in my freezer for another time!

What should we have for lunch?



Sometimes when you are on a VLCD (very low calorie diet) the hardest meal is lunch! Your in the middle of a busy day, there are times when I just don't want to cook but I simply have to eat! This is my Busy Day spinach salad! Its all in the fridge, I just assemble it! I have already cooked the eggs for the week. I have already make the 5 calorie dressing. Then it takes less than 5 minutes and is under 200 calories.

* Hard boiled egg
* A large handful of fresh organic baby spinach
* A handful of cherry tomatoes
* A mini cucumber or 1/4 or a english cucumber
* A bit of sweet Texas Onion
* 2 tablespoons of homemade dressing or your choice.

Wash (even pre-washed) spinach and toss in a large bowl add cucumber and onion tomato and dressing and toss well. Chop egg. Place spinach in bowl put egg on top and fresh pepper!
Lunch is served!

Pass The Pickles!



So... I got a craving for pickles (No not preggers) and made a batch of homemade refrigerator pickles that pass protocol. This isn't my usual refrigerator pickle recipe because I have to stick to the foods on the hCG protocol but these came out fantastic and I think I'll make these again and again... They sure don't taste like diet food!
Ingredients:
* 1 cup organic apple cider vinegar
* 1 organic cucumber
* 1/2 organic yellow onion
* 1 Tab. chopped parsley
* 2 or 3 cloves of fresh garlic
* 1 tea. sea salt
* 1 packet stevia (I use Truvia) to taste
* 1 Mason Jar with lid

Mix vinegar, parsley, salt, and stevia in a small bowl.
Slice onion garlic and cucumber.


Pack into one or two jars, dividing up cucumber, garlic and onion.




Pour over cucumber, put lid on tightly and put in fridge for over night.
They will keep a month but they won't last that long... You'll eat them!
