Day 11

Yesterday was a long day, I at what Kelly and I had made but had two stressful Doctors appointments. So I didn't photo my food yesterday...

Today for breakfast I had an apple and a cuppa tea.

Lunch:
Egg white frittata with sautéed asparagus, green onions and a scoop of my homemade salsa.




Snack was another apple...

Dinner:
3 oz Baked Sea Bass with ground melba toast and Season-All and cucumber/red onion salad with basil/vinegar dressing.


Desert is Orange Sorbet with sliced homemade sugarfree chocolate bark.

Day 9


Yeah... I missed posting on day 7 and day 8. My daughter Kelly and I shop and cook for the week every 6 days, then vacuum seal and mark everything. It makes it so much easier and we have been more successful this way.

No breakfast today...
Just wasn't hungry this morning...

Lunch:


3 ounces of baked chicken breast and 3 ounces of Aspargus steamed with some thai basil, fresh from my garden, in the steamer. It gives the asparagus a wonderful flavor! (You can use any fresh herb you like)

Snack:
A med. orange



Dinner:
Chili with NO beans


Most likely I'll have an apple tonight for dessert if I get hungry.


Tomorrow is weigh in day with the Doctor.

She is supervising my weight loss. I see her every week for a weigh in and a body composition scan, which tell us if I am losing, fat, water or muscle.

I'll check in tomorrow!

Day 6



Down another pound today! That's 7 pounds total since August 11th 2009! The first week the weight comes off fast.. then it slows down a bit... that's ok. This is the best diet ever! You see results and that keeps you SO motivated!

Breakfast:
I once again had my 1/2 grapefruit and Kelly had an apple and of course our
Yerba Mate or Oolong teas.



Lunch:
French Onion soup with 2 ounces of lean ground steak & 2 Melba Rounds


I switched to water with Lime today for a change.


Dinner:

Grilled steak burger with lettuce, onion and tomato


For dessert/snack
I had left over Strawberry sorbet from last night

Day Three!


Its day three and Kelly and I are on the VLCD days, along with the Hcg. I felt pretty hungry between meals today... And I think its because I ate so much the days before... But I'm ok and haven't cheated at all. I just had my last fruit serving at 4:00, that's when I am usually hungry.

Here is what we ate today:

Breakfast: A cup of Oolong Tea
1/2 grapefruit with O calorie Truvia
Lemon water





Lunch:
Spinach and Shrimp salad with Ms. Dash/Lemon dressing
More lemon water

Snack:
1 Apple


Dinner:
Paprika/garlic Grilled chicken with Grilled asparagus


Strict portion control and absolutely no oils are some of the rules of this VLCD.

Whats for dinner?



The weigh in went terrific.
My Doc was as pleased as I was!

Here are some photos of what I have been doing in the kitchen!

This photo was for lunch actually...
It was so good and I was so happy I made 6 of them.


Its Cilantro/Lime chicken burgers... FANTASTIC! I made up this recipe. SO EASY TOO!
2 boneless skinless chicken breasts cut into large chunks
a small handful of cilantro (to taste)
1/4 of an onion
a couple long dashes (to taste) of Cholula hot sauce
or a hot sauce of your choice
2 tab. bread crumbs
Salt and pepper

Put chunks of chicken in food processor and grind up for about 12 pulses. Add remaining ing. and pulse till smooth, but not mush.
Make into patties...

Cook on indoor grill or non stick skillet with a small amount of olive oil
for maybe 4 minutes a side.
Watch them tho...
don't cook them too long or they will dry out.
Just long enough for them to turn whitish.

Freeze what you don't use for another time. Put them on a bun if you want a burger,
if you are low carb-in like me... no bun necessary!




They came out tender and moist, delicious and healthy!
Try em! YUM I have some in my freezer for another time!

What should we have for lunch?



Sometimes when you are on a VLCD (very low calorie diet) the hardest meal is lunch! Your in the middle of a busy day, there are times when I just don't want to cook but I simply have to eat! This is my Busy Day spinach salad! Its all in the fridge, I just assemble it! I have already cooked the eggs for the week. I have already make the 5 calorie dressing. Then it takes less than 5 minutes and is under 200 calories.

* Hard boiled egg
* A large handful of fresh organic baby spinach
* A handful of cherry tomatoes
* A mini cucumber or 1/4 or a english cucumber
* A bit of sweet Texas Onion
* 2 tablespoons of homemade dressing or your choice.

Wash (even pre-washed) spinach and toss in a large bowl add cucumber and onion tomato and dressing and toss well. Chop egg. Place spinach in bowl put egg on top and fresh pepper!
Lunch is served!

Pass The Pickles!



So... I got a craving for pickles (No not preggers) and made a batch of homemade refrigerator pickles that pass protocol. This isn't my usual refrigerator pickle recipe because I have to stick to the foods on the hCG protocol but these came out fantastic and I think I'll make these again and again... They sure don't taste like diet food!
Ingredients:
* 1 cup organic apple cider vinegar
* 1 organic cucumber
* 1/2 organic yellow onion
* 1 Tab. chopped parsley
* 2 or 3 cloves of fresh garlic
* 1 tea. sea salt
* 1 packet stevia (I use Truvia) to taste
* 1 Mason Jar with lid

Mix vinegar, parsley, salt, and stevia in a small bowl.
Slice onion garlic and cucumber.


Pack into one or two jars, dividing up cucumber, garlic and onion.




Pour over cucumber, put lid on tightly and put in fridge for over night.
They will keep a month but they won't last that long... You'll eat them!
